There’s a lot of science behind bread and educators from the sciences—Judith Eisen, Miriam Deutsch, Karen Guillemin and Elly Vandegrift—have teamed up to create an honors college colloquium on this most fundamental of foodstuffs. In this effort, they collaborated with Jennifer Burns Bright, an adjunct instructor in comparative literature and English.

This story in Oregon Quarterly captures the reflections of these five friends on the essence of bread. It’s not just the vehicle for peanut butter and jelly—bread has a lot to teach us about using energy, managing microbes and creating life.
